From the high-altitude farm of Finca Cedruyoc in Calca, Yanatile, this 100% Bourbon coffee is the result of meticulous care and innovative double fermentation techniques by Juan José Huillca, a skilled agricultural technician and dedicated coffee farmer from Cusco, Peru. Juan José’s scientific approach to cultivation and processing, including the use of pH meters and refractometers, ensures cherries with higher sugar concentrations, contributing to the exceptional sweetness and complexity of this coffee. His commitment to sustainability is evident in his use of nutrient-rich organic fertilisers, developed through anaerobic fermentation methods, supporting both his farm and local coffee-growing community. The coffee cherries undergo a unique double fermentation: first, they ferment ‘in cherry’ for 48 hours before pulping, followed by a further 36 hours of fermentation in tanks. This 84-hour process enhances the coffee’s distinctive profile. After washing, the beans are dried carefully on raised beds for about 18 days, ensuring even drying and preserving quality. The Bourbon variety shines through with clarity and finesse, delivering a cup that is both complex and refreshing.
