Las Flores was founded in 1990 by Edilberto Vergara and Nubia Ayure. Jhoan Vergara Ayure studied at SENA to strengthen his technical and practical knowledge in coffee production, leading to new varieties and cup profiles aligned with the farm’s terroir. The process includes handpicking ripe cherries, oxidation, submerged fermentation using the must from a previous fermentation, anaerobic fermentation, and thermal shock before drying.
