FAMILIA DIAZ -Pacamara- / El Salvador
About This Coffee
This season's second El Salvador is Pacamara! A flavor like baked apple or black grapes. Over time, in addition to the sweet and rich nuances of beet sugar, the gentle fruity flavor of orange marmalade spreads throughout your mouth. This is a wonderful coffee that clearly shows the characteristics of high-quality Pacamara beans. The La Mina farm is run by three Diaz brothers: William, Renato, and Santos. The farm, which eldest son William inherited from his father at the age of 16, began its challenge to specialty coffee with an encounter with Alejandro Valiente. The farm, which started with Pacas and Bourbon varieties, eventually bore Pacamara fruit, and they were convinced that it was suited to this land. There is no road for cars to enter the farm, and all coffee after harvesting is processed on the farm. The dried beans are loaded onto horses and transported to the warehouse. Even in a harsh environment, the brothers, who have been working in the fields with their father since they were young, continue to produce specialty coffee with passion and brotherly bonds.
