Now in the hands of the fifth generation, the farm blends its deep-rooted expertise with innovative practices. In recent years, they have introduced new fermentation methods that build on tradition while pushing flavor boundaries. This particular coffee is processed using Double Anaerobic Fermentation, including two rounds of Carbonic Maceration. While similar to the previous CMH lot, the difference in microorganisms results in a lighter, brighter flavour profile, highlighting clean citrus notes.
