NEW in Aug 2025 Brazil M&F COFFEE Bioma Cafe "2024 COE EXP #1" A special lot has arrived from Minas Gerais, Brazil — the winner of 1st place in the Experimental category of the 2024 Cup of Excellence. The producers are Flávio and Marcelo, founders of M&F Coffee. Both born into farming families, they met in 2001 and bonded over a shared mission: to cultivate valuable, high-quality crops. In 2010, they established their own farm dedicated to specialty coffee production, and have since delivered numerous exceptional coffees to the world. This lot features the Arara variety, a relatively new Brazilian hybrid between Yellow Catuai and Obatã. It is known for its high resistance to disease and productivity, while offering bright, clean acidity, refined sweetness, and complex flavor. Especially notable are its elegant nutty and citrus (orange-like) aromas and a rounded mouthfeel — qualities that have earned it acclaim both in Brazil and internationally. For this lot, only fully ripe cherries are harvested under strict maturity control. After mechanical harvesting, immature cherries are removed through flotation. The cherries then undergo 72 hours of anaerobic fermentation in stainless steel tanks. Prior to harvest, the cherries are measured for Brix (sugar content), ensuring optimal ripeness. Every stage of production is carefully managed for maximum quality. The result is a cup with rich and complex aromas reminiscent of raisin and orange, and a smooth, hazelnut-like mouthfeel.
