About This Coffee

For 2025, and for a second year in a row, we have secured, air-freighted, and are now offering Abu Geisha to our community in record time. We have given this coffee just enough rest, and carefully dialed it in to properly showcase this outstanding offering. This is a “Mosto Washed” process Geisha. The cherries are hand-collected at peak ripeness and then carefully hand-selected. They undergo a double-phase fermentation process: first, the whole cherries are fermented for 48 hours in open tanks. After this initial stage, the cherries are pulped and macerated for 72 hours in closed GrainPro bags submerged in spring water, mixed with mosto (juice extracted from dried Geisha cascara). Following this unique fermentation, the coffee is fully hand-washed with fresh mountain spring water. Finally, the beans are dried on raised beds for 20 days, allowing the rich and layered flavors to fully develop.
