About This Coffee
This coffee is totally a melon juice. You smell it from the bean and the liquid too, and can be tasted while it is warm and after it has cooled down. It has the sweetness of Yubari melon, melon candy, vanilla and caramel. Juiciness of red grape. The aftertaste has a slight cocoa or dark chocolate richness. We have handled Andres coffees before, including NIU and Catiope. NIU is particularly memorable for many. His most active work is the Culturing Process, but this time we are introducing a coffee with a different process. Nitro Washed, as the name suggests it is a process that uses Nitrogen. It is used during fermentation in the washed process, which is an anaerobic fermentation. The use of nitrogen in this process promotes yeasts most active in a nitrogen-only environment. After 3-4 days of fermentation based on Brix values, the coffee is rinsed with clean water and allowed to dry naturally for 20-30 days
