DIOFANOR RUIZ GROWS JAVA AT LA DIVISA IN BUENAVISTA, QUINDÍO, AT CLOSE TO 2,000 MASL. He ferments the whole cherries anaerobically for 40 hours, then washes and dries the cherries. Soft florals and ripe fruit wrapped in a syrupy but delicate structure. This is our first time working with a coffee from Diofanor and we're hyped to connect more closely with him and his farm
