Our EA DE CAÑA decaf is the result of an innovative treatment in Colombia. Rather than being extracted by soaking or adding various chemical solvents, caffeine is removed by introducing ethyl acetone, a natural solvent resulting from the fermentation of sugar cane. The green beans are selected according to their quality and are soaked in ethyl acetone, which binds to the chlorogenic acid salts in the coffee. This chemical process allows the decaffeination of the beans, which will be steamed to remove any trace of the solvent. The beans retain their flavor and contain only 0.01 - 0.03% of their natural caffeine level
