About This Coffee
From the Sierra de las Minas in Guatemala, this lot comes from a small group of estate holders in El Progreso. After harvest, the coffees are brought together and prepared by Josue Morales and the team at Los Volcanoes Coffee in Antigua. Josue’s work centres education within growing communities and prioritises practical, sustainable farm management — an approach we value, and one that shows up here as consistency and cleanliness in the cup. In the cup we find pear, dried fruits and red apple. It is bright without being sharp, with a crisp apple-like acidity, a juicy pear character, and an elegant dried-fruit sweetness that lingers. Our light filter roast is designed to honour that clarity and let the fruit sit front and centre. Grown at 1800 masl, primarily Bourbon with red and yellow Caturra, and finished as a classic washed, patio-dried coffee, this is a clean, unadorned expression of El Progreso. The elevation and slow maturation bring precision to the fruit, while careful handling at Los Volcanoes keeps everything wonderfully tidy and transparent. Brewing suggestion: for pour-over, start at 1:16–1:17, 92–94°C water and a medium-fine grind. Lean a touch finer for more red-apple sweetness, or a shade coarser to emphasise the softer pear tones. It’s a quietly compelling, very drinkable filter coffee.
