Here’s how Aristobulo Rayo’s coffee road the wave in Jobo’s drum. Jobo really enjoys roasting geshas (despite the high stress level of every batch). He started this roast with a moderate gas setting – not too high and not too low. He lets it ride for a good amount of time and then decides to step the gas down incrementally until the pivotal first crack gas setting. Jobo notices that this gesha really likes to explode at first crack (similar to your most explosive Kenyas). Instead of using a higher setting to combat the moisture release, Jobo decides to delay any changes till the last second with a lesser setting to ride the moisture down until the end of the roast. As his door opens, the gesha beans are still happily cracking in the cooling tray. The beans have a nice wrinkle and color that match their elongated shape
