About This Coffee
In 2024, we had the chance to bring the coffees of producer Tamiru Tadesse back to Europe for the first time. Thanks to his expertise in processes, each coffee bears his unique signature: complexity, clarity and fruitiness. This lot is a striking example of this, with a structure in the cup that leaves us speechless. The cherries, harvested at perfect maturity, are carefully pulped before undergoing a 48-hour dry fermentation, then a 3-hour soak in lukewarm water, a rare method that accentuates the coffee's clarity and aromatic depth. Drying takes place slowly on shaded African beds until an ideal humidity level of 11% is reached. In the cup, this coffee is distinguished by a brilliant aromatic complexity: bright notes of candied lemon, a honeyed sweetness, and a subtle length on the palate reminiscent of black tea. An elegant and luminous cup, reflecting the craftsmanship of Alo Coffee.
