La Estrella Farm located in the municipality of La Unión, Nariño; has 8 hectares, of which 7 hectares are dedicated to the cultivation of coffee. The farm implements agroforestry systems with native tree species such as guamo, charcoal, and pine. The producer of the La Estrella farm, Carlos Estrella is the third generation of coffee growers in his family. This lot underwent a 48hr anaerobic fermentation as whole cherry before depulping
