This coffee is produced by the Flores family in the village of El Diamante, north of Peru, in the district of San José de Lourdes. Grown at over 1,900 meters above sea level, it comes from carefully harvested ripe cherries, then subjected to a nocturnal pre-fermentation followed by a fermentation of 24 to 36 hours after depulping, in order to reveal all their aromatic intensity.
