This varietal from Javier Rubio's farm is named San Bernardo — a rare natural mutation of Typica originating in Guatemala. This coffee was grown by Javier Rubio at El Libano, a farm known for its focus on quality and meticulous processing. Harvested at peak ripeness, the cherries are floated and hand-sorted to remove any defects before undergoing a carefully controlled fermentation process. Javier uses a 30-hour underwater fermentation method followed by gentle pulping. This is a clean, elegant coffee that rewards the effort behind every step. Expect a bright, sweet cup with notes of brown sugar, pear, and orange.
