Harvested at peak ripeness, the cherries are floated and hand-sorted to remove any defects before undergoing a carefully controlled fermentation process. Javier uses a 30-hour underwater fermentation method followed by gentle pulping. This is a clean, elegant coffee that rewards the effort behind every step.
