About This Coffee
After removing impurities from the coffee cherries, pulping is performed. It is put into a sealed tank together with the fermentation culture medium and fermented for 150 hours. The drying process is carried out in direct sunlight for 2 to 3 days and in the shade for 12 to 13 days to achieve the target moisture value. The gentle acidity like lime juice, the refreshing feeling like mint, and the sweetness reminiscent of syrup are enhanced
