About This Coffee

For brothers Jhonatan and Johan Gasca, coffee is a family business. Both men have made quite a name for themselves in their respective home bases, Bruselas (for Jhonatan) and Pitalito (for Johan). You saw quite a lot of Jhonatan's coffees come through our menu last year, and we are delighted to kick off 2025 by showcasing a new variety which both brothers had a hand in producing! Bourbon Aji is a fairly new "designer" coffee variety which is thought to be a mutation of Bourbon, and is almost exclusively grown in Colombia. The Gasca brothers have a small amount of this variety on Jhonatan's farm, Zarza, and they grew this lot especially for us. This lot underwent similar processing to Jhonatan's Washed Thermal Shock coffees we've previously offered, but with a much lighter hand. Low-impact processing was the goal here, in order to showcase the flavor profile of this up-and-coming coffee variety. Lightly floral and pleasantly sweet, this coffee also features vibrant acidity (like lemon zest) and stone fruit flavors (like peach)... which makes it sound almost like a Gesha, right? But, there's also a slightly herbal character about it that reminds us of sipping a Sidra. In any case, it's delicious - and it definitely convinced us that Bourbon Aji deserves a place at the cupping table
