About This Coffee

The Cup Mamut is gigantic in more ways than one. The roast? Medium-light, tuned to highlight its strength and poise. The profile? Chocolate, velvety, fig, raisin, caramel, apple, cashew, orange. It’s dense yet vibrant, a full-body experience with a luxurious mouthfeel that coats the palate in layers of fruit and sweetness. To bring out the full spectrum of this coffee, we did something we consider to be a very "chromatic" thing to do: we blended the wet and dry process lots, allowing each preparation method to lend its best traits to the final roast. The result is a cup that feels rounded and complete, with both clarity and depth. The Cultivar’s New Chapter We’re at the beginning of something exciting. This is a new cultivar to us, not yet fully understood, still being observed and nurtured. Developing and planting it at scale takes years of investment, trust, and curiosity. But it’s possible because of the relationships we’ve built with producers like Luis Rodriguez and Gloria Rodriguez, farmers who are just as fanatical and forward-thinking as we are, who have a deep love and respect for what these lands give us. Mamut represents more than just flavor. It represents genetic diversity, mutation, curiosity, open mindedness, and care. It’s a living celebration of what coffee is, and what coffee can become.
