The return of the EFM is here, with a lot specially developed for Tanat! This coffee reveals an intensely fruity and floral profile, marked by elegant notes of rose, lychee, jasmine and lemon. The EFM, for Extended Fermentation Method, begins with a rigorous selection of the ripest cherries, which first ferment anaerobically, whole, in order to concentrate the aromas directly in the heart of the fruit. After depulping, a second fermentation takes place in hermetic barrels, in the presence of carefully chosen indigenous yeasts and bacteria, which reinforces the sweetness and brings a remarkable aromatic depth
