This coffee is produced by Mauricio Shattah at Finca La Negrita in Tolima, Colombia. It undergoes a 48-hour anaerobic fermentation in stainless steel hermetic tanks stored in a climate-controlled darkroom. The coffee is then dried in rooms that filter out UV rays and only allow infrared rays to penetrate. Expect notes of creamy, peach cognac, raspberry, & lilac
